An easy homemade protein bar recipe packed with collagen and a sweet & zesty blueberry and lemon flavor combo!

Homemade Protein Bars!

My favorite part of making protein bars at home: I get to throw all my favorite things in them! With homemade protein bars, you can perfectly tailor the flavor intensity. I feel like everyone has their own preferred balance of sweet and zesty so it’s fun to be able to have complete control. I’m one of those people who definitely likes a higher sweet:sour ratio!

I also like to make these protein bars at home to avoid all of the secret inflammatory ingredients and oils in a few commercial brands. Even if a bar is marketed as “healthy”, the label often says otherwise. It’s also really difficult to find protein bars made with a high-quality protein. Most are soy or dairy based, both of which can potentially cause some digestive issues in some people.

Since being diagnosed with ulcerative colitis almost 2 years ago, my digestive system has been particularly hard to please. I try to stick to the foods “legal” on the Specific Carbohydrate Diet to help manage my UC symptoms. Although whey and casein are technically “legal” on the Specific Carbohydrate Diet (SCD) since lactose has been removed, it’s hard to find a ready-to-eat protein powder that doesn’t have other added ingredients and artificial sweeteners.

What is Collagen?!

Collagen peptides are small pieces of the larger collagen protein molecule. Collagen protein makes up a lot of important structures in animals and humans such as our bones, muscle, gut lining, skin, and nails. Because of this, collagen peptides are often taken to strengthen and improve problems with these parts of the body.

Despite the benefits associated with taking a collagen supplement, it’s a fantastic protein to add to recipes! Unflavored collagen peptide powders don’t contain any other added “filler” ingredients. Collagen protein powder also doesn’t change the texture of recipes or beverages since the small peptides (smaller pieces of a large protein molecule) are soluble in water. Because of this, I find myself adding this type of protein to everything!

Collagen peptide powders also help make sweet snacks and desserts feel more satisfying since it packs in a concentrated source of protein! Collagen is also a great protein to use since our bodies already make it every day. Because of this, your body can absorb it really well since it’s not some type of “foreign” protein from soy or dairy.

How to Make Homemade Protein Bars

Step 1: Combine the cashew butter, coconut flour, collagen peptide powder, dried blueberries, monk fruit, lemon zest, and lemon juice in a large bowl. Stir well until a thick mixture forms and evenly press into a 8.5″x4.5″ loaf pan lined with parchment paper.

Step 2: Lightly press a few extra dried blueberries, coconut flakes, and fresh lemon zest over the surface of the protein bars. Refrigerate overnight OR freeze for about 3 hours.

Step 3: Slice into evenly sized bars and enjoy! Refrigerate leftover bars in an air-tight container for the best texture.

Homemade protein bars packed with collagen for a healthy snack! Between the perfect sweet & zesty blueberry lemon flavor combo and the satisfying boost of protein and healthy fats, these collagen bars have quickly become one of my favorite snacks to prep for busy weeks! SCD, Paleo, Grain-free, Gluten-free, Refined-Sugar-Free, Dairy-Free, No-Bake.

Ingredients

  • 1 cup creamy cashew butter
  • 1/2 cup unflavored collagen peptides
  • 2.5 tbsp. coconut flour
  • 3 tbsp. monk fruit sweetener
  • 1 tsp. fresh lemon zest
  • 2 tbsp. fresh lemon juice
  • 1/4 cup dried wild blueberries
  • 2 tbsp. unsweetened shredded coconut

Instructions

  1. Prepare a 9″x5″ loaf pan by lining it with parchment paper.
  2. In a large mixing bowl, combine all of the ingredients together. Stir well until a thick mixture forms.
  3. Press the mixture evenly into the prepared loaf pan.
  4. (Optional) Top with additional dried blueberries, shredded coconut, and lemon zest, pressing slightly.
  5. Refrigerate overnight or freeze for at least 3 hours. Slice into evenly sized bars and enjoy! Refrigerate leftovers in an air-tight container for the best texture.
